"I wanted to thank you so very much for all the information and stories you shared with us about the benefits of a plant-based diet. After our visit to you, we were really inspired to learn all that we could about what we were eating and how we could feel better through a plant-based diet. Everything you said and taught us about diet and the direct correlation to health just made so much sense. I gave up dairy and meat almost entirely and my stomach issues went away completely. I haven't had to "diet" since. I do still have the occasional fish and a cheese plate at a party but I treat it as junk food. You really inspired me to devote time to think about the short-term and long-term affects and to study carefully how non-plant-based meals can adversely affect the body and the mind. We felt better almost immediately after adopting plant-based eating. Last week I realized that I went a week and didn't once eat anything that had a "mother and father" and more important didn't even realize it. I still have some milestones to reach and am learning more all the time as to how to eat better so that we can feel better. We are indebted to you for showing us the way. Looking back now I cannot believe we didn't realize some of the things we now know. Eating ground turkey or chicken as a healthy meal - yuck. I am getting to the point where I really understand all those people I always met who didn't eat animals because they felt "bad" for them. I do too now and hope to give up any and all meat/dairy in the near future. Thank you so much again Brooke. You inspired us by your delicious food and the straightforward, gentle way you shared your knowledge. The work you are doing is so important and please know it has a ripple affect. Not only have you inspired us but also our friends and families who you maybe haven't met but affected because of what we learned from you and continue to share with them- it has changed our lives so we are grateful!"
"Once I understood what was causing my illness, it was like flipping a switch. My wife and I made the decision on February 13th to change our lifestyle of eating. For us, it is not a diet, it is a life changing decision. As of Monday, February 15th , my doctor had prescribed Metformin for my diabetes. I was already taking a statin for cholesterol and another medication for my high triglycerides. My goal then was to eat what I needed so that my body could heal and eliminate my prescription medications over time. I am excited to share that eating a WFPB diet for the past 2 months that consists of only fruits, vegetables, legumes and whole grains, I have eliminated 2 of my three prescribed medications and reduced the 3rd , which is my statin. We have eliminated all animal-based products (beef, pork, poultry, dairy), white flour, refined sugars and all oils (even olive oil). These results will show you why we eat this way and will continue to do so for a lifetime. As of April 7th , my AIC was 6.2 (down from 9.8), my fasting glucose was 81, and my triglycerides were 129."
